Comparison with the default configuration from OpenCore 1.0.7
It does boot now, but I get stuck at "macOS Tahoe is not compatible with this Mac". I suspect the SMBIOS isn鈥檛 compatible, but I still need to look further into that.

It's booting! Some features aren't working properly and still need to be fixed (e.g. Broadcom Wi-Fi). To run the installation, you need to change the model in SMBIOS to
MacBookPro16,2.
