Pin the Unraid template to 0.17.2 - #630

The template pinned 0.16.1, so an Unraid install landed three releases behind with nothing on that path to say so: there is no in-app updater for the Docker install. 0.17.2's image is on GHCR and its Docker Publish run is green, which is the only condition under which this pin can move. Pinning ahead of a published image gives Unraid users a pull that fails.

Unraid users pull exactly this tag, so the template was handing out 0.16.1 while 0.17.0, 0.17.1 and 0.17.2 came and went. There is no in-app updater on the Docker path, so nothing else tells them.
The one condition this needs
The image has to be published before the pin moves, or Unraid users get a pull that fails. It is:
ghcr.io/stemdeckapp/stemdeck:0.17.2built and pushed, confirmed in the Docker Publish log for the v0.17.2 release.Testing
templates/stemdeck.xmlstill parses as XML. Nothing else in the file carries a version, so this is the only line that had to move.
