Update to bdk-swift 3.0.0
Tried to keep this scoped just to that simple migration, the only reason you see changes in the
Shared/Datafiles is because of a newNetworkKind... BDK’s descriptor APIs now take NetworkKind (main/test) instead of the full concreteNetworkso I added the smallest shim and left Arke’s existing network handling unchanged everywhere else.
