Summary

Regular update for the ClickHouse versions used in the CI following the SECURITY.md file

Note

Low Risk
CI matrix and documentation only; no adapter or runtime behavior changes.

Overview
Refreshes local CI and user-facing docs so testing tracks ClickHouse releases with active security support per SECURITY.md.

In test_local_matrix.yml, the matrix drops 25.8, 26.4, and 26.5 and adds 26.8 (paired with 26.3 across Python 3.10–3.13), plus 26.9 and 26.10 on Python 3.12 alongside latest and head. CHANGELOG records the same version churn and notes 26.3 as the documented minimum tested release. docs/index.mdx updates the limitations bullet from “25.3 or newer, untested older” to 26.3 or newer, with a link to the security policy.
