CI/maintenance chore: bring the ClickHouse version coverage of both test suites onto the
support policy — the 3 latest series plus the last 2 LTS series, plus head. No client
behavior changes, so no changelog fragment and no version bump.

Target set derived from ClickHouse utils/list-versions/version_date.tsv:

• latest (newest 3): 26.10, 26.9, 26.8
• LTS (newest 2): 26.8, 26.3

Changes

• .github/workflows/tests.yml (regress-clickhouse, HTTP driver): +26.10, -26.7.
• .github/workflows/tests-tcp.yml (regress-clickhouse-tcp, TCP driver): +26.10, -26.7.

Both matrices are now [latest, 26.10, 26.9, 26.8, 26.3]. head stays covered by
nightly.yml (HTTP and TCP). The floating latest entry is kept; it satisfies no policy slot.

Notes

• The support floor stays 26.3, so the policy statement in AGENTS.md needs no edit.
• "26.10" is quoted, so YAML keeps it a string (unquoted, it parses as the float 26.1).
  Both fixtures parse CLICKHOUSE_VERSION with System.Version, so 26.10 orders after 26.9
  for ClickHouseFeatureMap and TcpServerFeatures.
• clickhouse/clickhouse-server:latest currently resolves to the same image digest as 26.10.
• Version coverage only. Single-version pins elsewhere are untouched.

Test

• Both workflow files parse as YAML; the matrices resolve to [latest, 26.10, 26.9, 26.8, 26.3].
• docker manifest inspect clickhouse/clickhouse-server:<tag> succeeds for 26.10, 26.9, 26.8,
  26.3, latest and head.
• No residual references to 26.7 remain in .github/.
